More often it is used as a second stage of overheat protection when operational thermostat (themperature controller) does not disconnect the appliance when the set limit temperature is reached.
Limitative thermostat is actuated when limit temperature is reached — it leads to safety (emergency) opening of a circuit with the ability to turn it on manually after the fault handling.
